白果芋泥 G inkgo Yam Paste -- 4人份 serves 4

用料

清油4汤匙

芋头800克

鲜白果20个

清水250毫升

班兰叶6片

浅色有机糖200克

做法

芋头去皮蒸熟,压成幼细的芋茸约500克待用。

鲜白果加入少许有机糖和少许清水一起煮至熟待用。

取一个煮锅,加入清水和班兰叶煮滚,倒出200毫升待用。

取一个煮锅,倒入清油、200毫升班兰叶水和有机糖,用小火煮溶后,慢慢加入芋茸,以小火用大木匙不停搅煮至芋茸幼滑无粒状。

把煮好的芋泥分别盛入小碗中,缀以白果即可。

小贴士

搅煮芋泥时,不能有粒状。如水份不足,可慢慢加入搅煮。如果水份太多,芋泥将没有弹性,而水份太少,则会焦底,影响味道。

Ingredients

4 tbsp oil

800g yam

20 fresh ginkgo nuts

250ml water

6 pieces pandan leaves

200g organic light-brown sugar

Method

Peel yam and steam until cooked. Mash to smooth paste. Set aside about 500g.

Add ginkgo nuts and some organic sugar in water to cook. Set aside.

Add water and pandan leaves in a pot and bring to a boil. Pour out 200ml for later use.

Add oil, 200ml pandan leaf water and organic sugar in a pot. Simmer over low heat until sugar melts. Add yam paste slowly and continue to stir with a big wooden ladle over low heat until smooth and non-lumpy.

Serve in small bowls and garnish with ginkgo nuts.

Tips

When you stir to cook the yam paste, make sure there are no lumps. If it needs water, add water slowly as you stir. Too much water will thin the yam paste, while too little water will result in scorching.
