材料:

四季豆 250克, 橄榄菜 1汤匙

调味料:

生抽 2茶匙, 糖 1茶匙

做法:

四季豆撕去老筋,切成小段,放在沸水当中淖约1分钟,再泡入冷水,凉后捞出沥干水备用。

炒锅当中放少许油,将橄榄菜放下去煸出香味,倒入四季豆,将生抽与糖洒入锅内,快速翻匀即可出锅。

提示: 四季豆中含有一种叫皂素的生物碱,只要加热至100℃以上,便可破坏其毒性。所以,四季豆一定要煮至熟才可以食用。

Ingredients:

Long beans 250g, Preserved Olives 1tbsp

Seasonings:

Soy Sauce 2tbsp, Sugar 1tsp

Method:

Remove the though fibers on the long beans. Cut into small pieces and run water on the beans for about 1 minute. Soak in cold water and drain. Put aside.

Heat wok with a little oil. Put preserve olives into the wok and cover it until fragrant. Put in long beans and seasonings. Saute the vegetables till cooked. Serve.

Note: Long beans contain organic compounds which are alkaline in nature, neutralized at 100C and above. Therefore, long beans need to be fully cooked.
