【素食厨房】拌美丽--Assorted Vegetables

材料 (4人份):
调味料:
西兰花梗 1个, 香油 1汤匙, 香菜 30克, 苹果醋 2汤匙, 土豆 1个, 冬笋 50克, 胡萝卜 半条, 豆腐百页 50克, 素火腿 50克
做法:
将西兰花梗、胡萝卜、土豆削去外皮、冬笋,然后切成6cm长薄片。
香菜洗净切成段,素火腿,豆腐百页切成6cm长细丝,备用。
烧开半锅热水,加入1茶匙盐,待溶化后,将西兰花梗,土豆,胡萝卜,冬笋,分别放在水中烫半分钟,而后再泡在冰水里片刻,捞出沥干水份。
将西兰花梗片,土豆片,胡萝卜片,冬笋片,切成幼丝。
将烫好的材料与百页丝,素火腿丝,香菜一起摆于盘中,吃时淋上香油与苹果醋拌匀即可。
提示:
任何一种果醋都可用于此菜。
不用西兰花梗,可改用芥兰菜梗都可。

Broccoli stem 1 ea,Sesame Oil 1 tbsp, Parsley 30g,Apple Cider 2 tbsp, Potato 1 ea, Bamboo 50g, Carrot 1/2 ea, Tofu skin 50g, Vegetarian ham 50g
Method:
Remove skin from broccoli stem, carrot and potato. Cut them and the bamboo into 6 cm thin slices. Put aside.
Wash parsley and cut into strips. Cut vegetarian ham and tofu skin into 6 cm strips.
Heat half a wok of water and add in 1 tsp of salt to dissolve. Put in sliced broccoli stem, carrot, potato and bamboo to boil separately for ? min. Remove and rinse in cold water.
Cut them into strips.
Place all the strips of vegetables and vegetarian ham in a plate. Serve with sesame oil and apple cider.
Note:
The vegetables mentioned above can go with any ciders.
Broccoli stem can be replaced by cauliflower stem.
